ISM Ingredients 2027 will take place on 31 January - 3 February 2027 in Hall 5.2 and Passage 4/5 of the Koelnmesse exhibition grounds in Cologne. The fair brings international suppliers of raw materials, functional ingredients and semi-finished products for the confectionery and snack industry together with manufacturers and product developers; it covers basic raw materials, fats, flavours, colourings, stabilisers and additives as well as semi-finished products. ISM Ingredients is held under a joint umbrella with ISM Snacks & Sweets and ISM Manufacturing, which take place on the same dates at the same exhibition grounds, bringing together the value chain from raw materials to production and the finished product. In February 2026, 87 companies exhibited at ISM Ingredients; across the three fairs, 1,790 exhibitors from 75 countries and about 32,500 trade visitors from 140 countries took part. Target visitors are specialists in product development and R&D, purchasing and procurement, production and quality management, and innovation and brand management; the fair is open to trade visitors only.
